General gelatin production process
Gelatin is a protein substance derived from collagen, a natural protein found in mammalian tendons, bones, and tissues. It is produced by boiling the tissues, bones, and skins of animals. Usually, it comes from cows, pigs, fish, or even some plants. Gelatin quality control starts from the selection of good raw materials. If it is animal parts, it should be from healthy animals, coming from the slaughterhouse that meets sanitary standards before it is brought into the factory. Companies or factories that produce gelatin should use modern and standardized machines, and pass quality control by qualified inspection agencies both nationally and internationally.
Principles of gelatin quality control
Gelatin producers must comply with strict food processing requirements. These regulations include the cleanliness of the plant, equipment and workers, and the amount of additives, flavorings, and colors that are allowed to be added to production. Technology is now used in the production and quality control of gelatin. The automated and computer-assisted control system is set up to allow settings and monitoring ingredient quantities, including time and temperature, acidity and alkalinity as well as the flow level. Valves are installed along the pipes to allow continuous product sampling.
Gelatin will have a different “bloom” which is a measure and control of gelatin quality, as well as strength and firmness in accordance with the final usages. Throughout the manufacturing process, there will be technical inspections and measurements of the “bloom” value.
